 Sheet Pan Pierogies with Caramelized Onions & Chipotle Sour Cream

Description

Pierogies (sometimes spelled perogies or pirogi) are Eastern European dumplings traditionally made with a soft dough that’s filled with a variety of ingredients. The most common filling is potato and cheese, but you’ll also find versions stuffed with sauerkraut, ground meat, mushrooms, spinach, or even sweet fillings like fruit.


Ingredients

  • 16 oz frozen pierogies (potato & cheddar recommended)
  • 2 large sweet onions, thinly sliced
  • 4 tbsp unsalted butter
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • Salt & pepper, to taste
  • Fresh parsley, for garnish

Chipotle Sour Cream (optional but amazing):

  • ⅔ cup sour cream
  • 1 chipotle pepper in adobo
  • 2 tsp adobo sauce

Instructions

  • Preheat oven to 400°F (200°C).
  • Caramelize onions:
    • In a skillet, melt butter over medium heat.
    • Add onions, salt, and pepper. Cook ~10 min until soft.
    • Stir in balsamic vinegar and cook 5 more min until golden and jammy.
  • Prepare sheet pan:
    • Spray with olive oil or nonstick spray.
    • Toss pierogies in olive oil and arrange in a single layer.
    • Sprinkle with garlic powder, paprika, salt, and pepper.
    • Spoon caramelized onions (and butter) over pierogies.
  • Roast:
    • Bake 20–30 min, flipping halfway, until pierogies are golden and crisp.
  • Make chipotle sour cream:
    • Blend sour cream, chipotle, and adobo sauce until smooth.
  • Serve:
    • Garnish with parsley and serve hot with chipotle sour cream.

Notes

These crispy sheet pan pierogies pair wonderfully with sour cream, caramelized onions, or a fresh green salad. For extra flavor, sprinkle with fresh herbs like dill or parsley before serving. Leftovers can be stored in an airtight container in the fridge for up to 3 days and reheated in the oven to keep them crispy.
