Instructions

  1. Preheat the oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare the ingredients:
    • Slice the bell peppers and onion into strips.
    • Mince the garlic.
    • If using sausages in casings, leave them whole. If using uncased sausage, you can break it into chunks.
  3. Mix the vegetables:
    • On a large sheet pan, combine the sliced peppers, onion, and garlic.
    • Drizzle with olive oil, then sprinkle with oregano, basil, smoked paprika, salt, and pepper.
    • Toss everything together to coat evenly.
  4. Add the sausage:
    • Arrange the sausages on top of the vegetable mixture.
  5. Bake:
    • Place the sheet pan in the preheated oven and bake for 25-30 minutes.
    • After 15 minutes, flip the sausages and stir the vegetables to ensure even cooking.
    • Continue baking until the sausages are browned and cooked through (internal temperature of 160°F/71°C) and the vegetables are tender.
  6. Optional broil:
    • For extra caramelization, turn on the broiler for the last 2-3 minutes of cooking.
  7. Serve:
    • Remove from the oven and garnish with fresh parsley.
