Instructions
- Preheat the oven:
- Preheat your oven to 400°F (200°C).
- Prepare the ingredients:
- Slice the bell peppers and onion into strips.
- Mince the garlic.
- If using sausages in casings, leave them whole. If using uncased sausage, you can break it into chunks.
- Mix the vegetables:
- On a large sheet pan, combine the sliced peppers, onion, and garlic.
- Drizzle with olive oil, then sprinkle with oregano, basil, smoked paprika, salt, and pepper.
- Toss everything together to coat evenly.
- Add the sausage:
- Arrange the sausages on top of the vegetable mixture.
- Bake:
- Place the sheet pan in the preheated oven and bake for 25-30 minutes.
- After 15 minutes, flip the sausages and stir the vegetables to ensure even cooking.
- Continue baking until the sausages are browned and cooked through (internal temperature of 160°F/71°C) and the vegetables are tender.
- Optional broil:
- For extra caramelization, turn on the broiler for the last 2-3 minutes of cooking.
- Serve:
- Remove from the oven and garnish with fresh parsley.
- Serve with crusty bread, over rice, or toss with cooked pasta.
