- 3 ripe avocados, diced

Instructions
- Cure the Shrimp:
- In a glass bowl, combine shrimp and lime juice.
- Let sit for 5–10 minutes until shrimp turn opaque (the lime juice “cooks” them).
- Mix the Base:
- Add tomatoes, onion, jalapeño, and cilantro.
- Toss gently and refrigerate for 30–60 minutes to let flavors meld.
- Add Avocado:
- Just before serving, fold in diced avocado.
- Season with salt and pepper to taste.
- Serve Chilled:
- Spoon into cocktail glasses or serve with tortilla chips, cucumber slices, or tostadas.
