Ingredients
- 1 lb shrimp (peeled and deveined)
- 2 ears corn (cut into thirds, then halved lengthwise)
- ½ lb andouille sausage (sliced)
- 1 lb baby red potatoes (cut into 2-inch pieces)
- 3 tbsp melted butter
- 1 tbsp minced garlic
- 3 tbsp Old Bay seasoning
- Juice from ½ lemon
- Salt and pepper to taste
- Fresh parsley and lemon wedges (for garnish)
Instructions
- Pre-cook veggies: Boil corn and potatoes for 10 minutes. Drain and set aside.
- Mix ingredients: In a large bowl, combine shrimp, sausage, corn, and potatoes. Pour over the butter, garlic, lemon juice, Old Bay, salt, and pepper. Toss to coat.
- Assemble foil packs: Divide mixture among four 12×12-inch sheets of aluminum foil. Fold edges to seal into packets.
- Cook:
- Grill: Preheat to medium-high. Grill packets 8–10 minutes per side.
- Oven: Bake at 400°F (200°C) for 15–20 minutes.
- Brown butter (optional): Melt remaining butter in a saucepan over medium-high heat until golden amber.
- Serve: Open foil packs carefully. Top with parsley, lemon wedges, and drizzle with browned butter.
