Description
Shrimp Scampi Pasta is a dish that combines shrimp with pasta in a rich, buttery, garlic-infused sauce. The shrimp is typically sautéed in butter and olive oil, with a hint of white wine or chicken broth for depth of flavor. The sauce is brightened with lemon juice and seasoned with parsley, salt, and pepper to balance the richness. Often served over linguine or spaghetti, Shrimp Scampi Pasta is not only quick and easy to make but also delivers a high-impact, delicious meal.
Ingredients
- 8 oz linguine or spaghetti pasta
- 1 lb large shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup dry white wine or chicken broth
- Juice of 1 lemon
- Salt and freshly ground black pepper, to taste
- 1/4 cup chopped fresh parsley
- Grated Parmesan cheese, for serving (optional)
Instructions
- Cook Pasta:
Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water. - Cook Shrimp:
In a large skillet, heat 2 tablespoons of butter and 3 tablespoons of olive oil over medium-high heat. Add the shrimp, season with salt and pepper, and cook for about 2 minutes per side until pink and opaque. Remove shrimp from the skillet and set aside. - Make Scampi Sauce:
In the same skillet, add the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant but not browned. Pour in the white wine (or chicken broth) and lemon juice. Let it simmer for 2-3 minutes to reduce slightly. - Combine:
Reduce heat to low, add the remaining 2 tablespoons of butter, and stir until melted. Return the shrimp to the skillet along with the cooked pasta. Toss everything together, adding reserved pasta water a little at a time if the sauce needs thinning. - Finish and Serve:
Stir in chopped parsley. Taste and adjust seasoning with salt, pepper, and more lemon juice if desired. Serve immediately with grated Parmesan cheese if you like.
