For the Shrimp Scampi:

  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (adjust to taste)
  • 1/2 cup dry white wine (e.g., Sauvignon Blanc)
  • 1 lemon (zested and juiced)
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper (to taste)

Instructions

Cooking the Pasta:

  1. Boil the Linguine:
    • In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente.
    • Reserve 1/2 cup of pasta water, then drain the linguine and set aside.

Making the Shrimp Scampi:

  1. Cook the Shrimp:
    • In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat.
    • Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
    • Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes on one side, then flip and cook for another 2-3 minutes until the shrimp are pink and opaque. Season with salt and pepper. Remove the shrimp from the skillet and set aside.
  2. Prepare the Sauce:
    • In the same skillet, pour in the white wine, scraping up any browned bits from the bottom. Let it simmer for about 2-3 minutes until slightly reduced.
    • Add the lemon juice and zest, then stir in the remaining 2 tablespoons of butter until melted and combined.
  3. Combine Pasta and Shrimp:
    • Return the cooked shrimp to the skillet along with the drained linguine. Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency.
    • Stir in the chopped parsley and adjust seasoning with salt and pepper as needed.

Serving

  • Serve immediately, garnished with additional parsley and lemon wedges if desired.

Notes
