Ingredients
For the Pasta:
- 8 ounces linguine
- Salt (for pasta water)
For the Shrimp Scampi:
- 1 pound large shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (adjust to taste)
- 1/2 cup dry white wine (e.g., Sauvignon Blanc)
- 1 lemon (zested and juiced)
- 1/4 cup fresh parsley, chopped
- Salt and pepper (to taste)
Instructions
Cooking the Pasta:
- Boil the Linguine:
- In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente.
- Reserve 1/2 cup of pasta water, then drain the linguine and set aside.
Making the Shrimp Scampi:
- Cook the Shrimp:
- In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat.
- Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
- Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes on one side, then flip and cook for another 2-3 minutes until the shrimp are pink and opaque. Season with salt and pepper. Remove the shrimp from the skillet and set aside.
- Prepare the Sauce:
- In the same skillet, pour in the white wine, scraping up any browned bits from the bottom. Let it simmer for about 2-3 minutes until slightly reduced.
- Add the lemon juice and zest, then stir in the remaining 2 tablespoons of butter until melted and combined.
- Combine Pasta and Shrimp:
- Return the cooked shrimp to the skillet along with the drained linguine. Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency.
- Stir in the chopped parsley and adjust seasoning with salt and pepper as needed.
Serving
- Serve immediately, garnished with additional parsley and lemon wedges if desired.
Notes
For added flavor, top with freshly grated Parmesan, a squeeze of lemon, and chopped parsley. Pair it with garlic bread or a light green salad for a complete meal. Want a spicy kick? Add a pinch of red pepper flakes while sautéing the shrimp!
