Skillet Shrimp Scampi with Zucchini Noodles is a healthy variation of the classic shrimp scampi, which typically features shrimp cooked in a rich, buttery sauce and served over pasta. In this version, zucchini noodles (often called zoodles) replace traditional pasta, providing a low-carb, gluten-free option. The dish is garlicky, buttery, and wonderfully flavorful, with the zucchini noodles offering a light and satisfying base.

  • lbs zucchini (about 34 medium), spiralized
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 shallot, finely chopped
  • ½ tsp red pepper flakes (optional)
  • ½ cup dry white wine or chicken broth
  • Juice of 1 lemon
  • Salt and black pepper, to taste
  • 2 tbsp chopped fresh parsley
  • 2 tbsp grated Parmesan (optional)

Instructions

  • Prep the Zoodles Spiralize zucchini and set aside. If you want firmer noodles, salt them lightly and let sit in a colander for 10 minutes, then pat dry.
  • Sear the Shrimp Heat 1 tbsp olive oil and 1 tbsp butter in a large skillet over medium-high heat. Season shrimp with salt and pepper. Sauté for 2–3 minutes per side until pink and opaque. Remove and set aside.
  • Make the Scampi Sauce In the same skillet, add remaining butter and oil. Sauté shallot and garlic until fragrant (about 2 minutes). Add red pepper flakes if using.
  • Deglaze & Simmer Pour in wine or broth and lemon juice. Simmer for 2–3 minutes until slightly reduced.
  • Add Zoodles Toss in zucchini noodles and cook for 2–3 minutes until just tender. Don’t overcook—they should retain a slight crunch.
  • Combine & Serve Return shrimp to the skillet. Toss everything together with parsley and Parmesan. Serve immediately.

Notes

For an extra burst of flavor, top with freshly grated Parmesan and a squeeze of lemon just before serving. If you want to make it more filling, serve it with a side of whole grain garlic bread or a crisp green salad.
