Ingredients
For the Apple Filling
6–7 medium apples, peeled, cored, and sliced (about 6 cups)

1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg

½ cup brown sugar (or coconut sugar)
½ teaspoon cinnamon
¼ teaspoon salt
½ cup unsalted butter, melted
Instructions
Prepare the apples:
In a large bowl, toss apple slices with lemon juice, sugar, cinnamon, nutmeg, vanilla, and cornstarch until evenly coated.
Transfer the mixture to your slow cooker (about 4–6 quart size).
Make the streusel topping:
In another bowl, mix oats, flour, brown sugar, cinnamon, and salt.
Pour in melted butter and stir until crumbly and well combined.
Assemble:
Sprinkle the oat streusel evenly over the apples in the slow cooker.
Cook:
Cover and cook on HIGH for 2½–3 hours or LOW for 4–5 hours, until apples are tender and the topping is golden and crisp around the edges.
Crisp up the topping (optional):
If you want a crispier top, uncover and place under the oven broiler for 2–4 minutes after cooking. Watch carefully so it doesn’t burn!
Serve warm:
Spoon into bowls and top with vanilla ice cream, whipped cream, or a drizzle of caramel sauce.
