  • 1 baguette, sliced into ½-inch rounds
  • 3 tbsp olive oil, for brushing
  • 8 oz smoked salmon (cold-smoked preferred)
  • 1 cup full-fat cream cheese, softened
  • 2 tbsp chopped fresh dill, plus more for garnish
  • 2 tbsp chopped capers
  • 2 spring onions, finely sliced
  • 2 tsp lemon juice
  • 2 tsp lemon zest
  • Salt & black pepper, to taste

Instructions

  1. Toast the Crostini
    • Preheat oven to 360°F (180°C).
    • Brush baguette slices with olive oil on both sides.
    • Bake for 10–12 minutes until golden and crisp. Let cool.
  2. Make the Herb Cream Cheese
    • In a bowl, mix cream cheese, dill, capers, spring onions, lemon juice, zest, salt, and pepper.
    • Whip until smooth and fluffy.
  3. Assemble the Crostini
    • Spread a generous layer of herb cream cheese on each toast.
    • Top with a folded slice of smoked salmon.
    • Garnish with extra dill or a twist of lemon zest.

Notes

Top each crostini with a sprig of fresh dill, a few capers, or a thin slice of red onion for extra flavor and an elegant finish. These make a perfect brunch bite or classy appetizer for any gathering.
