Ingredients
- 1 baguette, sliced into ½-inch rounds
- 3 tbsp olive oil, for brushing
- 8 oz smoked salmon (cold-smoked preferred)
- 1 cup full-fat cream cheese, softened
- 2 tbsp chopped fresh dill, plus more for garnish
- 2 tbsp chopped capers
- 2 spring onions, finely sliced
- 2 tsp lemon juice
- 2 tsp lemon zest
- Salt & black pepper, to taste
Instructions
- Toast the Crostini
- Preheat oven to 360°F (180°C).
- Brush baguette slices with olive oil on both sides.
- Bake for 10–12 minutes until golden and crisp. Let cool.
- Make the Herb Cream Cheese
- In a bowl, mix cream cheese, dill, capers, spring onions, lemon juice, zest, salt, and pepper.
- Whip until smooth and fluffy.
- Assemble the Crostini
- Spread a generous layer of herb cream cheese on each toast.
- Top with a folded slice of smoked salmon.
- Garnish with extra dill or a twist of lemon zest.
Notes
