At its core, the S’mores Crumbl Cookie combines the irresistible flavors of a traditional s’more—crispy graham crackers, melted chocolate, and toasted marshmallows—into a soft, chewy cookie. These cookies take the familiar flavors of a campfire treat and transform them into a dessert you can make anytime, anywhere.
Ingredients
For the Cookie Base:

1 cup (226g) unsalted butter, browned and cooled

1 cup (200g) brown sugar

½ cup (100g) granulated sugar

2 large eggs

1 tsp vanilla extract

2¾ cups (345g) all-purpose flour

1 cup (120g) graham cracker crumbs

1 tsp baking soda

½ tsp salt

1 cup milk chocolate chips
For the Toppings:

1 cup mini marshmallows (or marshmallow fluff)

½ cup graham cracker streusel (mix ¼ cup graham crumbs + 2 tbsp melted butter + 1 tbsp sugar)

¼ cup melted chocolate (for drizzle)
Instructions
Step 1: Brown the Butter

Melt the butter in a saucepan over medium heat. Stir occasionally until the butter begins to brown and gives off a nutty aroma. This process usually takes about 5-7 minutes.

Once the butter is golden brown, remove it from the heat and allow it to cool to room temperature before using it in the dough. Browning the butter gives these cookies a richer, deeper flavor.
Step 2: Make the Dough

In a large mixing bowl, beat together the browned butter, brown sugar, granulated sugar, eggs, and vanilla extract until the mixture is light and fluffy.

Sift the flour, graham cracker crumbs, baking soda, and salt into the mixture and fold them together until well combined.

Finally, fold in the chocolate chips, making sure they are evenly distributed throughout the dough.

After the dough is prepared, cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 30 minutes. Chilling the dough will prevent the cookies from spreading too much during baking and will result in chewier cookies.
Step 3: Bake the Cookies

Preheat your oven to 375°F (190°C). Line your baking sheet with parchment paper.

Use a cookie scoop or a spoon to scoop about ¼ cup of dough and form dough balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.

Step 4: Add the Marshmallows

As soon as the cookies come out of the oven, immediately press 4-5 mini marshmallows into the center of each cookie (or pipe marshmallow fluff on top).

For an extra touch, you can use a kitchen torch to toast the marshmallows to a perfect golden brown.
Step 5: Toast & Finish

Once the marshmallows are toasted, broil the cookies in the oven for 20-30 seconds (keep a close eye on them to avoid burning).

Once out of the oven, sprinkle the graham cracker streusel (graham crumbs, melted butter, and sugar) over the cookies.

Finally, drizzle the melted chocolate over the cookies for that perfect finishing touch.
