S’mores Ice Cream Sandwiches are a frozen twist on the traditional campfire treat known as s’mores. Instead of roasting marshmallows over an open flame and stacking them between graham crackers with chocolate, this version layers melted chocolate and marshmallows between graham crackers — then adds a thick, creamy layer of ice cream before freezing everything into delightful sandwiches.
Ingredients
For the Sandwich Layers:
16 graham cracker squares (or 8 full sheets, halved)
1 1/2 cups mini marshmallows
1 1/2 cups semisweet or milk chocolate chips (or chunks)
2 tbsp butter (optional, for richness)
For the Filling:
1 pint (2 cups) vanilla ice cream (or chocolate, marshmallow, or s’mores-flavored) — slightly softened
Optional Add-Ins:
Crushed graham crackers for extra crunch
Chocolate or caramel drizzle
Mini marshmallows for rolling edges
Instructions
1. Prepare the Pan
Line an 8×8-inch (20×20 cm) baking dish with parchment paper.
Lay 8 graham squares on the bottom to form the base layer.
2. Make the Chocolate-Marshmallow Layer
In a microwave-safe bowl (or saucepan), combine chocolate chips and butter; heat in 20-second intervals until melted and smooth.
Stir in the mini marshmallows until just coated and gooey (some can stay whole).
Spread this mixture evenly over the graham layer.
Place in the freezer for 15–20 minutes to firm slightly.
3. Add the Ice Cream
Spread softened ice cream evenly over the chilled chocolate-marshmallow layer.
Top with remaining 8 graham cracker squares, pressing gently to form sandwiches.
4. Freeze
Cover tightly and freeze for at least 2–3 hours (or until solid enough to slice).
5. Serve
Remove from the freezer and let sit for 3–5 minutes to soften slightly.
Cut into sandwiches using a sharp knife.
Optional: roll edges in crushed graham crackers, mini marshmallows, or drizzle with melted chocolate.
