  • 1 egg yolk
  • 2 tsp pure vanilla extract
  • 1½ cups chocolate chunks (mix of semisweet, milk, and dark chocolate)

Instructions

  • Mix dry ingredients: In a large bowl, whisk together flour, baking soda, cornstarch, and salt. Set aside.
  • Prepare wet ingredients: In another bowl, whisk melted butter, brown sugar, and granulated sugar until smooth. Add the egg and egg yolk, whisking until combined. Stir in vanilla extract.
  • Combine: Pour the wet mixture into the dry ingredients and mix with a spatula until a soft dough forms. Fold in chocolate chunks.
  • Chill the dough: Cover and refrigerate for at least 2 hours (or overnight for deeper flavor).
  • Preheat oven: Set to 325°F (163°C). Line baking sheets with parchment paper.
  • Shape cookies: Scoop 2 tbsp of dough per cookie, rolling into balls. Arrange 3 inches apart on the baking sheet.
  • Bake: Cook for 13–14 minutes until edges are lightly golden. Centers will look soft but will set as they cool.
  • Cool: Let cookies rest on the baking sheet for 10 minutes, then transfer to a wire rack.

Notes

For irresistibly soft cookies, don’t overbake—they’ll continue to set as they cool. Chill the dough for deeper flavor and thicker cookies. You can also mix in chopped nuts, white chocolate chips, or a pinch of sea salt on top for a fun twist!
