The key to sourdough discard crumpets is the starter’s natural yeast and tang, which adds flavor and texture, making these crumpets stand out from their store-bought counterparts.
Ingredients
1 cup (240 g) sourdough discard (100% hydration)
½ tsp baking soda
¼ tsp salt
1 tsp sugar (optional, helps browning)
1–2 tsp melted butter or neutral oil (for cooking)

Instructions
. Preheat and prep:
Heat a nonstick skillet or griddle over medium-low heat.
Grease crumpet rings (or round cookie cutters, or mason jar lids) and the pan lightly with butter or oil.
2. Mix the batter:
In a bowl, stir together sourdough discard, salt, and sugar.
Just before cooking, sprinkle baking soda on top and stir well — the mixture will bubble and expand.
(If you have time, let it sit 10–15 minutes for extra rise.)
3. Cook the crumpets:
Place greased rings on the hot pan and spoon about ¼ cup batter into each ring (should be about ½-inch thick).
Cook on medium-low heat for 5–6 minutes, until the tops look set and full of holes.
Gently remove the rings (use tongs) and flip each crumpet.
Cook 1–2 more minutes on the other side until golden.
4. Serve warm:
Enjoy straight off the pan, or toast before serving.
