  • 1 red bell pepper, diced

  • 1–2 tsp smoked paprika (pimentón) — sweet or hot

  • 1 tsp ground cumin (optional but great)

  • 1 can (14 oz / 400g) crushed or diced tomatoes

  • 1–2 cups chicken or vegetable broth (adjust for thickness)

  • 2 cans chickpeas (drained & rinsed) or 3 cups cooked chickpeas

  • 1 bay leaf

  • Salt & black pepper to taste

  • Optional extras:

    • Pinch of saffron

    • Splash of dry sherry or white wine

    • Chopped fresh parsley for garnish
