Ingredients
For the Saffron Rice:
- 1 cup Spanish round rice (or Arborio)
- 3 cups vegetable broth

- 4 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- Sea salt & freshly cracked black pepper
For the Garlic Shrimp:
- 12 jumbo shrimp, peeled & deveined
- 2 tbsp extra virgin olive oil
- 2 cloves garlic, thinly sliced
- Sea salt & black pepper
- Fresh parsley, chopped (for garnish)
- Lemon wedges (optional)
Instructions
1. Infuse the Saffron:
- Warm 2 tbsp of broth and steep saffron threads for 10 minutes to release color and aroma.
2. Cook the Shrimp:
- Heat olive oil in a skillet over medium-high.
- Add sliced garlic and sauté until golden (about 30 seconds).
- Add shrimp, season with salt and pepper, and cook 1–2 minutes per side until pink and lightly seared.
- Remove shrimp and garlic, set aside.
3. Prepare the Rice Base:
- In the same pan, add more olive oil if needed.
- Sauté onion and minced garlic until translucent.
- Stir in rice, peas, paprika, saffron infusion, and remaining broth.
- Season with salt and pepper.
4. Simmer:
- Bring to a boil, then reduce heat to medium-low.
- Simmer uncovered for 10 minutes, stirring occasionally.
- Add shrimp and garlic back in, gently nestling into the rice.
- Cook another 5 minutes until liquid is absorbed and rice is tender.
5. Serve:
- Fluff rice gently, garnish with parsley and lemon wedges.
- Plate with flair—this dish deserves it!
