For the Spiced Chickpeas:

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 1 tbsp olive oil

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • 1/2 tsp ground turmeric

  • 1/2 tsp chili powder (adjust to heat preference)

  • 1/4 tsp salt

  • 1/4 tsp black pepper

For the Salad:

  • 2 ripe mangoes, peeled and diced

  • 2 cups mixed salad greens (spinach, arugula, or romaine)

  • 1/2 cucumber, thinly sliced

  • 1/4 red onion, thinly sliced

  • 1/4 cup fresh cilantro, chopped

  • 1/4 cup toasted almonds or cashews (optional for crunch)

For the Lime Tahini Dressing:

  • 3 tbsp tahini

  • 1 tbsp lime juice (freshly squeezed)

  • 1 tsp maple syrup or honey (optional for sweetness)

  • 12 tbsp warm water (to adjust consistency)

  • 1/2 tsp garlic powder

  • Salt and pepper, to taste


Instructions

Step 1: Roast the Chickpeas

  1. Preheat your oven to 400°F (200°C).

  2. Pat the chickpeas dry with a paper towel to remove any excess moisture. This helps them become crispy when roasting.

  3. Toss the chickpeas in olive oil, cumin, smoked paprika, turmeric, chili powder, salt, and black pepper. Make sure they are evenly coated with the spices.

  4. Spread the chickpeas in a single layer on a baking sheet and bake them for 25-30 minutes. Shake the pan halfway through to ensure they cook evenly. The chickpeas should be golden brown and crispy when done.

  5. Once they are crispy, take them out of the oven and set them aside.

Step 2: Prepare the Salad

While the chickpeas are roasting, it’s time to prepare the rest of the salad ingredients:

  1. Peel and dice the mangoes into bite-sized pieces.

  2. Thinly slice the cucumber and red onion.

  3. Chop the fresh cilantro.

  4. If you’re using toasted almonds or cashews for added crunch, toast them in a dry pan over medium heat for a few minutes until they are lightly browned.

Step 3: Make the Lime Tahini Dressing

  1. In a small bowl, whisk together tahini, lime juice, and maple syrup (or honey) until smooth.

  2. Add garlic powder, salt, and pepper to taste.

  3. Slowly add warm water, one tablespoon at a time, until the dressing reaches your desired consistency. It should be thick but pourable.

Step 4: Assemble the Salad

  1. In a large mixing bowl, combine the salad greens, cucumber, red onion, mango, and cilantro.

  2. Add the roasted chickpeas and gently toss everything to combine.

  3. Drizzle the lime tahini dressing over the salad and toss again to coat all the ingredients with the dressing.

Step 5: Garnish & Serve

  1. If desired, sprinkle the salad with toasted almonds or cashews for extra crunch.

  2. Serve immediately, and enjoy the delicious and healthy flavors of this vibrant salad!

Notes

This salad is perfect as a light lunch or a refreshing side dish. For extra crunch, top with roasted sunflower seeds or crushed pita chips. Want more heat? Add a pinch of chili flakes or sliced jalapeños. The lime tahini dressing also works great as a dip—double the batch and store it in the fridge for up to 5 days!
