  • 50g caster sugar
  • 120g self-raising flour (or 150g plain flour + 2 tsp baking powder)
  • ½ tsp bicarbonate of soda
  • 1 egg yolk
  • 2½ tbsp apricot jam
  • 1 tsp vanilla extract
  • 2 tsp apple cider vinegar
  • 120ml oat milk (or regular milk)
  • Butter, for greasing

For the spiced syrup:

  • 100g caster sugar
  • 60ml boiling water
  • 2 tbsp butter
  • 60ml milk
  • ½ tsp vanilla essence
  • 1 cinnamon stick
  • ¼ tsp ground nutmeg

Instructions

  • Preheat oven to 200°C (180°C fan). Grease 6 holes in a cupcake tray.
  • Mix dry ingredients: In a bowl, whisk together sugar, flour, and bicarbonate of soda.
  • Mix wet ingredients: In another bowl, whisk egg yolk, apricot jam, vanilla, vinegar, and milk until smooth.
  • Combine: Whisk wet into dry until smooth. Divide batter evenly into cupcake holes.
  • Bake for 20–25 minutes until golden and risen.
  • Make syrup: In a saucepan, combine all syrup ingredients. Bring to a gentle boil, then simmer for 5 minutes.
  • Soak: Pour hot syrup over baked puddings immediately. Let sit for at least 1 hour to absorb.
  • Serve warm with vanilla ice cream and a drizzle of warm apricot jam.
