Description
A Spiced Pear and Almond Galette is a free-form, rustic tart made from a buttery pastry dough, almond cream (frangipane), and ripe, spiced pears. The dough is rolled out into a rough circle, and the filling is spread inside before folding the edges of the dough over the filling to create a beautiful, rustic presentation. Ingredients
For the Galette Dough
- 1¼ cups (155g) all-purpose flour
- 1 tbsp granulated sugar
- ¼ tsp salt
- ½ cup (115g) unsalted butter, cold and cubed
- 3 tbsp ice water
For the Almond Cream (Frangipane)
- ½ cup (50g) almond flour
- ¼ cup (50g) granulated sugar
- 3 tbsp unsalted butter, softened
- 1 large egg
- ½ tsp vanilla extract
- ¼ tsp almond extract (optional)
For the Spiced Pear Filling
- 3 ripe but firm pears, thinly sliced
- 2 tbsp granulated sugar
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp ground ginger
- 1 tbsp lemon juice
- 1 tbsp honey (for glazing, optional)
For Finishing
- 1 egg yolk + 1 tbsp milk (for egg wash)
- 1 tbsp sliced almonds (optional)
- Powdered sugar (for dusting)
- Vanilla ice cream or whipped cream (for serving)
Instructions
- Make the Dough
- Mix flour, sugar, and salt.
- Cut in cold butter until pea-sized crumbs form.
- Add ice water gradually until dough holds together.
- Shape into a disc, wrap, and chill for 30 minutes.
- Prepare the Frangipane
- Cream butter and sugar until smooth.
- Beat in egg, vanilla, and almond extract.
- Stir in almond flour until smooth. Chill until ready to use.
- Prepare the Pears
- Toss sliced pears with sugar, cinnamon, nutmeg, ginger, and lemon juice.
- Let sit for 10 minutes to release juices.
- Assemble the Galette
- Roll out dough into a rough circle (~12 inches).
- Spread frangipane in the center, leaving a 2-inch border.
- Arrange pears over the frangipane.
- Fold edges over the filling, pleating as needed.
- Brush crust with egg wash and sprinkle with sliced almonds.
- Bake
- Preheat oven to 375°F (190°C).
- Bake for 45–55 minutes until golden and bubbling.
- Brush pears with honey for shine (optional).
- Cool slightly, dust with powdered sugar.
- Serve
- Slice and serve warm with vanilla ice cream or whipped cream.
