  • Chicken:
    • 1 lb (450 g) boneless, skinless chicken thighs or breasts, sliced thinly
    • 2 tablespoons soy sauce
    • 1 tablespoon cornstarch
    • 1 tablespoon vegetable oil (for cooking)
  • Vegetables:
    • 4 cups green cabbage, thinly sliced
    • 1 bell pepper, sliced (any color)
    • 1 medium carrot, julienned
    • 3 green onions, chopped
    • 2 cloves garlic, minced
    • 1-inch piece of ginger, grated
  • Sauce:
    • 2 tablespoons soy sauce
    • 1 tablespoon oyster sauce (optional)
    • 1 tablespoon chili paste or Sriracha (adjust to taste)
    • 1 teaspoon sesame oil
    • 1 tablespoon rice vinegar or apple cider vinegar
    • Salt and pepper to taste

Instructions

  1. Marinate Chicken:
    • In a bowl, combine the sliced chicken with 2 tablespoons of soy sauce and 1 tablespoon of cornstarch. Mix well and let it marinate for about 15-20 minutes.
  2. Prepare Sauce:
    • In a small bowl, whisk together the soy sauce, oyster sauce (if using), chili paste, sesame oil, vinegar, salt, and pepper. Set aside.
  3. Cook Chicken:
    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
    • Add the marinated chicken and stir-fry for about 5-7 minutes, or until the chicken is cooked through and browned. Remove the chicken from the pan and set aside.
  4. Stir-Fry Vegetables:
    • In the same skillet, add a bit more oil if needed. Add the minced garlic and grated ginger, sauté for about 30 seconds until fragrant.
    • Add the sliced cabbage, bell pepper, and carrot. Stir-fry for about 5-6 minutes, or until the vegetables are tender but still crisp.
  5. Combine:
    • Return the cooked chicken to the skillet with the vegetables. Pour the prepared sauce over the mixture and stir well to combine. Cook for an additional 2-3 minutes until everything is heated through.
  6. Garnish and Serve:
    • Stir in the chopped green onions before serving. Serve hot over rice or noodles.

Notes

For extra flavor and texture, top with toasted sesame seeds or chopped peanuts. Serve it over steamed rice or noodles for a complete meal. You can also add bell peppers, carrots, or snap peas for more color and crunch.
