Instructions

  • Cook the Pasta Bring a large pot of salted water to a boil. Cook spaghetti according to package directions. Drain, reserving 1 cup of pasta water. Toss pasta with a little olive oil and set aside.
  • Make the Sauce In a large skillet, heat olive oil over medium-high. Add garlic, salt, and crushed red pepper. Sauté until fragrant (about 1 minute).
  • Simmer Tomatoes Add crushed tomatoes, reserved pasta water, and oregano. Bring to a high simmer and cook until the sauce thickens but remains loose—about 12–15 minutes.
  • Add Fish and Olives Stir in tilapia and olives. Cook until fish is opaque and flakes easily, about 3–4 minutes.
  • Combine and Serve Add cooked spaghetti and parsley to the skillet. Toss everything together until well coated. Divide among bowls and serve hot.
