Sushi bowls, also known as “chirashi,” have their roots in traditional Japanese cuisine, where a variety of fish and toppings are scattered over a bed of seasoned rice. However, Spicy Tuna Sushi Bowls take a modern twist by adding spicy tuna, a popular topping found in many sushi rolls, to the bowl.

For the Sushi Rice:
- 1 cup sushi rice
- 1 1/4 cups water
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
For the Spicy Tuna:
- 8 ounces sushi-grade tuna (diced)
- 2 tablespoons mayonnaise (preferably Kewpie)
- 1 tablespoon sriracha (adjust to taste)
- 1 teaspoon soy sauce
- 1 teaspoon sesame oil
- 1 green onion (finely chopped)
For Toppings:
- 1 avocado (sliced)
- 1 cucumber (sliced or julienned)
- 1/2 cup edamame (shelled and cooked)
- Seaweed sheets (nori, cut into strips)
- Sesame seeds (for garnish)
- Pickled ginger (for serving)
- Wasabi (optional)
Instructions
- Prepare the Sushi Rice:
- Rinse the sushi rice under cold water until the water runs clear. Drain well.
- In a pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low and cover. Cook for about 18-20 minutes until the rice is tender and water is absorbed.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Let it cool to room temperature.
- Make the Spicy Tuna:
- In a bowl, combine diced tuna, mayonnaise, sriracha, soy sauce, sesame oil, and chopped green onion. Mix well and adjust seasoning to taste.
- Assemble the Bowls:
- Divide the sushi rice among serving bowls. Top each bowl with a generous portion of spicy tuna.
- Arrange avocado slices, cucumber, and edamame around the tuna.
- Garnish and Serve:
- Sprinkle sesame seeds over the top and add strips of nori. Serve with pickled ginger and wasabi on the side.
