Description

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp garlic powder
  • 2 large eggs
  • ¾ cup milk
  • ½ cup melted butter
  • 2 tsp sugar (optional, balances flavor)
  • 2 cups baby spinach, chopped
  • ½ cup crumbled feta cheese
  • 1 plum tomato, finely chopped (optional)
  • 2 tbsp grated parmesan (for topping)

Instructions

  1. Preheat oven to 190°C (375°F). Grease or line a 12-cup muffin tin.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, pepper, garlic powder.
  3. In another bowl, beat eggs, milk, melted butter, and sugar until well combined.
  4. Add wet ingredients to dry and stir gently until just combined.
  5. Fold in spinach, feta, and tomato (if using). Do not overmix.
  6. Spoon batter evenly into muffin cups. Sprinkle with parmesan.
  7. Bake for 20–25 minutes, or until golden and a toothpick comes out clean.
  8. Cool slightly in the tin, then transfer to a wire rack.

Notes
