Ingredients
For the Filling:
- 8 oz (225g) cream cheese, softened
- ½ cup (100g) granulated sugar

- 2 cups (480ml) vegetable oil (for frying)
- ½ cup (100g) granulated sugar (for coating)

Instructions
Step 1: Prepare the Filling
- In a mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy.
- Gently fold in the chopped strawberries. Set aside.
Step 2: Assemble the Chimichangas
- Lay a tortilla flat on a clean surface. Spoon 2–3 tablespoons of the cheesecake filling into the center of the tortilla.
- Fold in the sides of the tortilla, then roll it up tightly like a burrito, ensuring the filling is fully enclosed. Repeat with the remaining tortillas and filling.
Step 3: Fry the Chimichangas
- Heat the vegetable oil in a deep skillet or saucepan over medium heat (about 350°F/175°C).
- Carefully place the chimichangas seam-side down into the hot oil. Fry 2–3 at a time, turning occasionally, until golden brown and crispy (about 2–3 minutes per side).
- Remove the chimichangas with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
Step 4: Coat the Chimichangas
- In a shallow dish, mix the sugar and cinnamon.
- While the chimichangas are still warm, roll them in the cinnamon-sugar mixture until fully coated.
