  • 2 tbsp elderflower cordial

  • 1 tbsp fresh lemon juice

  • 1 tbsp sugar

For the Glaze

  • ¾ cup (90 g) powdered sugar, sifted

  • 1 tbsp elderflower cordial

  • 1 tbsp lemon juice (adjust for consistency)

Instructions

1. Preheat & Prepare

  • Preheat oven to 350°F (175°C).

  • Grease and line a 9×5-inch loaf pan with parchment paper.


2. Make the Batter

  1. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

  2. In a large bowl, cream butter and sugar together until light and fluffy (2–3 minutes).

  3. Beat in eggs, one at a time, followed by lemon zest, elderflower cordial, and vanilla.

  4. Add the dry ingredients in two additions, alternating with sour cream and lemon juice, mixing gently just until combined.


3. Bake

  • Pour batter into prepared pan and smooth the top.

  • Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.

  • Cool in the pan for 10 minutes, then transfer to a rack.


4. Brush with Syrup

While loaf is still warm:

  1. Whisk together powdered sugar, elderflower cordial, and lemon juice until smooth and pourable.
