Ingredients
- 8 oz vegan cream cheese (or regular, if preferred)
- ½ cup sun-dried tomatoes (dry, chopped; soak if needed)
- ¼ cup frozen spinach (thawed & squeezed dry – optional)
- 2 large garlic cloves, minced
- ¼ cup grated parmesan or vegan parmesan
- Salt & black pepper to taste
- 2 large flour tortillas
- 24 fresh basil leaves
Instructions
- Make the Filling:
- In a bowl, mix cream cheese, sun-dried tomatoes, spinach, garlic, parmesan, salt, and pepper until smooth and well combined.
- Assemble the Pinwheels:
- Lay out tortillas and spread the filling evenly across each, all the way to the edges.
- Place basil leaves over the filling, leaving one edge bare for sealing.
- Roll & Slice:
- Roll the tortilla tightly from the basil-covered edge toward the bare edge.
- Slice into ½-inch pinwheels using a serrated knife.
- Serve or Store:
- Serve immediately or chill for 30 minutes to firm up before serving.
- Great for meal prep—store in an airtight container for up to 2 days.
