Description

  • ¼ cup frozen spinach (thawed & squeezed dry – optional)
  • 2 large garlic cloves, minced
  • ¼ cup grated parmesan or vegan parmesan
  • Salt & black pepper to taste
  • 2 large flour tortillas
  • 24 fresh basil leaves

Instructions

  1. Make the Filling:
    • In a bowl, mix cream cheese, sun-dried tomatoes, spinach, garlic, parmesan, salt, and pepper until smooth and well combined.
  2. Assemble the Pinwheels:
    • Lay out tortillas and spread the filling evenly across each, all the way to the edges.
    • Place basil leaves over the filling, leaving one edge bare for sealing.
  3. Roll & Slice:
    • Roll the tortilla tightly from the basil-covered edge toward the bare edge.
    • Slice into ½-inch pinwheels using a serrated knife.
  4. Serve or Store:
    • Serve immediately or chill for 30 minutes to firm up before serving.
    • Great for meal prep—store in an airtight container for up to 2 days.
