4 cups tortilla chips, roughly broken

1 cup shredded lettuce
1 cup diced tomatoes
½ cup sliced black olives
½ cup diced red onion
½ cup corn kernels (fresh, canned, or roasted)
½ cup black beans, rinsed and drained
¼ cup chopped cilantro
½ cup sour cream or ranch dressing (optional)
½ cup salsa or pico de gallo
Instructions
1. Cook the beef:
In a large skillet over medium heat, cook ground beef and onion until beef is browned.
Add garlic, chili powder, cumin, smoked paprika, salt, pepper, cayenne, and tomato paste.
Stir well and simmer 2–3 minutes until fragrant and fully combined. Remove from heat.
2. Assemble the skillet salad:
In a large oven-safe skillet (or keep it stovetop), layer tortilla chips evenly on the bottom.
Sprinkle half of the cheese over the chips.
Spoon the seasoned beef over the chips and cheese.
Add a second layer of tortilla chips and the remaining cheese on top.
3. Melt the cheese:
Place skillet under a broiler for 2–3 minutes or cover and heat on the stove until cheese is melted and bubbly. Watch carefully to avoid burning.
