  • 10 cups water

  • ⅔ cup (150g) baking soda (for boiling)

  • 1 egg, beaten (for egg wash)

🧀 For the Cheese Dip:

  • 2 tbsp butter

  • 2 tbsp all-purpose flour

  • 1 cup (240ml) milk (whole milk or half-and-half works best)

  • 1 cup (120g) shredded sharp cheddar cheese

  • ½ cup (60g) shredded mozzarella (optional for stretchiness)

  • ¼ tsp garlic powder

  • ¼ tsp smoked paprika (optional)

  • Salt and pepper, to taste


Instructions

🥣 1. Make the Pretzel Dough

  1. In a large bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until foamy.

  2. Stir in salt and melted butter.

  3. Gradually mix in flour, 1 cup at a time, until a soft dough forms.

  4. Knead the dough on a lightly floured surface for 5–7 minutes, until smooth and elastic.

  5. Place in a greased bowl, cover, and let rise in a warm spot for 45 minutes, or until doubled in size.


🫧 2. Boil the Pretzel Bites

  1. Preheat oven to 425°F (220°C). Line two baking sheets with parchment paper.

  2. Bring 10 cups water and ⅔ cup baking soda to a boil in a large pot.

  3. Punch down the dough and divide into 6 equal pieces. Roll each piece into a rope (about ¾ inch thick) and cut into 1-inch bites.

  4. In batches, boil the bites for 30 seconds, then remove with a slotted spoon and place on prepared baking sheets.
