Instructions

  • Cook the Sweet Potato: Start by peeling and chopping the sweet potato into chunks. Cook it until it’s tender—either by boiling or baking. Allow it to cool once cooked.

  • Mash the Sweet Potato: After cooling, scoop out the flesh of the sweet potato and mash it with a fork. Add the vanilla extract and cinnamon for flavor. If you prefer a sweeter ice cream, you can add maple syrup or honey at this stage.

  • Freeze the Mashed Sweet Potato: Place the mashed sweet potato into a container and freeze it for at least 2 hours. The freezing will give the ice cream its firm texture.

  • Prepare the Banana: While the sweet potato is freezing, slice the banana and place it in a separate container. Freeze the banana slices for at least 2 hours as well.
