- 2 tbsp chopped walnuts
- 1 tbsp brown sugar
- ½ tsp cinnamon
Instructions
1. Prep the Sweet Potato
- Roast, steam, or boil sweet potatoes until soft. Mash or blend into a smooth purée. Let cool.
2. Mix Dry Ingredients
- In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and both sugars.
3. Mix Wet Ingredients
- In another bowl, whisk sweet potato purée, eggs, oil, vanilla, and warm milk until smooth.
4. Combine
- Pour wet mixture into dry ingredients. Stir gently until just combined—don’t overmix.
- Fold in chopped walnuts and any optional add-ins.
5. Bake
- Preheat oven to 350°F (180°C). Grease an 8×4-inch loaf pan.
- Pour batter into pan and smooth the top.
- Sprinkle with topping mixture if using.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
