Description
Taco Soup with Chipotle is a comforting soup that combines many of the flavors associated with taco fillings, but in a warm, soupy form. The addition of chipotle peppers in adobo sauce elevates the dish by adding a smoky heat that complements the savory meat, beans, and vegetables. The soup is a fantastic option for taco lovers looking to enjoy all their favorite taco ingredients in a bowl.
Ingredients
For the Soup:
- 1 tablespoon olive oil
- 1 pound ground beef (or ground turkey/chicken)
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can corn kernels, drained
- 1 (14 oz) can diced tomatoes
- 1 (8 oz) can tomato sauce
- 2 cups beef or chicken broth
- 1–2 chipotle peppers in adobo sauce, minced (adjust for spice level)
- 1 packet taco seasoning (or homemade taco seasoning)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
For Toppings:
- Shredded cheddar or Mexican blend cheese
- Sour cream
- Chopped cilantro
- Sliced jalapeños
- Tortilla chips or strips
- Lime wedges
Instructions
Step 1: Cook the Meat
- Heat olive oil in a large pot over medium heat.
- Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if necessary.
- Stir in the diced onion and garlic, cooking until softened (about 2-3 minutes).
Step 2: Add the Base Ingredients
- Add the black beans, kidney beans, corn, diced tomatoes, tomato sauce, chipotle peppers, and broth to the pot.
- Sprinkle in the taco seasoning, cumin, chili powder, and a pinch of salt and pepper. Stir to combine.
Step 3: Simmer
- Bring the soup to a boil, then reduce the heat to low.
- Cover and simmer for 20-25 minutes, stirring occasionally to let the flavors meld.
Step 4: Adjust Seasoning
- Taste the soup and adjust the seasoning as needed. Add more chipotle peppers for extra heat or lime juice for a tangy kick.
Step 5: Serve
- Ladle the soup into bowls and top with shredded cheese, sour cream, cilantro, jalapeños, and tortilla chips.
- Serve with lime wedges on the side for squeezing over the soup.
Notes
For extra flavor, top your taco soup with shredded cheese, sour cream, avocado slices, or fresh cilantro. If you like it spicier, add a pinch of cayenne or an extra chipotle pepper. This soup also freezes well, making it a great make-ahead meal.
