- 4 large bell peppers (any color)

- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn (canned or frozen)
- 1 cup salsa
- 1 cup shredded cheese (cheddar or Mexican blend)
- Fresh cilantro (for garnish)
- Salt and pepper (to taste)
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Peppers:
- Cut the tops off the bell peppers and remove the seeds and membranes.
- Place the peppers cut side up in a baking dish.
- Cook the Filling:
- In a large skillet over medium heat, add the ground beef and cook until browned. Drain excess fat.
- Add the diced onion and minced garlic to the skillet. Cook until the onion is translucent.
- Stir in the taco seasoning, cooked rice, black beans, corn, and salsa. Mix well and cook for about 5 minutes, allowing the flavors to combine. Season with salt and pepper to taste.
- Stuff the Peppers:
- Spoon the taco filling into each bell pepper, packing it down slightly.
- Top each stuffed pepper with shredded cheese.
- Bake:
- Cover the baking dish with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.
- Serve:
- Remove from the oven and let cool for a few minutes.
- Garnish with fresh cilantro before serving.
