Description

Taco Stuffed Peppers are bell peppers filled with a savory mixture of ground beef (or turkey), rice, beans, corn, and spices, topped with melted cheese. This dish is a fantastic way to enjoy the flavors of a taco in a healthier format. The peppers serve as a natural vessel for the filling, making it easy to serve and eat. They are not only delicious but also visually appealing, making them a great choice for entertaining guests.

Ingredients

Scale
  • 4 large bell peppers (any color)
  • 1 lb (450g) ground beef (or ground turkey)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (about 1 oz)
  • 1 cup cooked rice (white or brown)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (canned or frozen)
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro (for garnish)
  • Salt and pepper (to taste)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Peppers:
    • Cut the tops off the bell peppers and remove the seeds and membranes.
    • Place the peppers cut side up in a baking dish.
  3. Cook the Filling:
    • In a large skillet over medium heat, add the ground beef and cook until browned. Drain excess fat.
    • Add the diced onion and minced garlic to the skillet. Cook until the onion is translucent.
    • Stir in the taco seasoning, cooked rice, black beans, corn, and salsa. Mix well and cook for about 5 minutes, allowing the flavors to combine. Season with salt and pepper to taste.
  4. Stuff the Peppers:
    • Spoon the taco filling into each bell pepper, packing it down slightly.
    • Top each stuffed pepper with shredded cheese.
  5. Bake:
    • Cover the baking dish with aluminum foil and bake for 30 minutes.
    • Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  6. Serve:
    • Remove from the oven and let cool for a few minutes.
    • Garnish with fresh cilantro before serving.

Notes

Want to spice it up? Add a drizzle of hot sauce or a dollop of sour cream before serving. These stuffed peppers also make great leftovers—just reheat and enjoy the next day! Perfect for meal prep or a cozy weeknight dinner.
