For the stir-fry:

  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 1½ cups broccoli florets
  • 1 ripe peach, sliced (or use canned peach slices, drained)
  • 2 tbsp sesame oil (or neutral oil)
  • 2 garlic cloves, minced
  • 1 tsp grated fresh ginger

For the teriyaki sauce:

  • ¼ cup soy sauce (low sodium preferred)
  • 1 tbsp rice vinegar
  • 1 tbsp maple syrup or honey
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 tsp toasted sesame seeds (optional)
  • Pinch of chili flakes (optional, for heat)

Instructions

  1. Prep the tofu:
    • Press tofu for 20–30 minutes to remove excess moisture.
    • Cut into bite-sized cubes and toss with a little soy sauce and cornstarch.
  2. Pan-fry tofu:
    • Heat 1 tbsp oil in a skillet over medium heat.
    • Add tofu and cook until golden and crispy on all sides. Set aside.
  3. Sauté veggies and peach:
    • In the same pan, add remaining oil.
    • Sauté garlic and ginger for 30 seconds.
    • Add broccoli and cook for 3–4 minutes until bright green and tender-crisp.
    • Add peach slices and stir gently for 1 minute.
  4. Make the sauce:
    • In a bowl, whisk soy sauce, rice vinegar, maple syrup, and cornstarch slurry.
    • Pour into the pan and let it bubble and thicken for 1–2 minutes.
  5. Combine:
    • Return tofu to the pan and toss everything to coat in the sauce.
    • Sprinkle with sesame seeds and chili flakes if using.

Notes

For extra depth of flavor, sprinkle toasted sesame seeds or chopped green onions on top before serving. You can also swap peaches with pineapple for a tropical twist, or serve the stir-fry over brown rice or soba noodles for a hearty meal.
