Description

The Tex-Mex Black Bean & Mango Salad is a bright, refreshing dish that combines the bold flavors of Tex-Mex cuisine with the sweetness of tropical fruit. Packed with fiber and protein from black beans and mango, this salad is not only delicious but also highly nutritious. The addition of fresh vegetables like red bell peppers, cherry tomatoes, and corn elevates the flavor profile, while the creamy avocado and zesty dressing tie everything together.

Ingredients

Scale

For the Salad

  • 1 (15 oz) can black beans, drained and rinsed

  • 1 large ripe mango, diced

  • 1 red bell pepper, diced

  • 1 cup cherry tomatoes, halved

  • 1 small red onion, finely chopped

  • 1 jalapeño, finely chopped (remove seeds for less heat)

  • 1 cup corn kernels (fresh, frozen, or grilled)

  • ½ avocado, diced (optional but delicious)

  • ¼ cup fresh cilantro, chopped

For the Dressing

  • 3 tbsp fresh lime juice (about 1–2 limes)

  • 2 tbsp olive oil

  • 1 tbsp apple cider vinegar or white wine vinegar

  • 1 tsp honey or agave (optional, to balance acidity)

  • ½ tsp cumin

  • ½ tsp chili powder or smoked paprika

  • Salt and pepper, to taste

Instructions

  • Prepare the Salad Base
In a large bowl, combine black beans, mango, bell pepper, tomatoes, red onion, jalapeño, corn, and cilantro.

  • Make the Dressing
In a small bowl or jar, whisk together lime juice, olive oil, vinegar, honey (if using), cumin, chili powder, salt, and pepper until emulsified.

  • Combine & Toss
Pour the dressing over the salad and toss gently to coat everything evenly.
Fold in avocado last (if using) to avoid mashing it.

  • Chill & Serve
Let the salad sit for at least 15 minutes before serving so the flavors can meld.
Serve chilled or at room temperature.

Notes

This colorful salad bursts with sweet, spicy, and tangy flavors—perfect for summer picnics, potlucks, or taco nights! Serve it as a side dish, or add grilled chicken or shrimp to turn it into a satisfying main course.
