Ingredients
For the Curry
1 lb (450 g) large shrimp, peeled and deveined
2 tbsp green curry paste (adjust to taste)
1 can (14 oz / 400 ml) coconut milk
1 cup mixed vegetables (bell peppers, zucchini, snap peas, or eggplant)
1 tbsp vegetable oil or coconut oil
2–3 kaffir lime leaves (optional, for authentic flavor)
1 tsp fish sauce (or soy sauce for vegetarian/vegan option)
1 tsp sugar
Juice of ½ lime
For Garnish
Fresh Thai basil or cilantro leaves
Sliced red chili (optional, for extra heat)

Instructions
1. Prep the Shrimp
Pat shrimp dry and season lightly with salt.
Set aside while preparing vegetables.
2. Cook the Curry
Heat oil in a large skillet or wok over medium heat.
Add green curry paste; sauté for 1–2 minutes until fragrant.
Pour in coconut milk and stir until the curry paste is fully incorporated.
Add kaffir lime leaves, fish sauce, and sugar; bring to a gentle simmer.
3. Add Vegetables
Add your chosen vegetables.
Simmer 3–5 minutes until slightly tender but still crisp.
4. Cook the Shrimp
Add shrimp to the curry.
Simmer 2–3 minutes until shrimp turn pink and are cooked through.
Remove from heat and stir in lime juice.
5. Serve
Serve hot over steamed jasmine rice or rice noodles.
Garnish with Thai basil, cilantro, sliced chili, and lime wedges.
