Description

Chili Con Carne is a fantastic dish that brings comfort and warmth, perfect for cold nights, game days, or anytime you’re craving something hearty and flavorful. With its blend of spicy chili powder, smoky paprika, and tender beans, it’s a dish that can be easily customized to suit your personal taste. Whether you prefer a classic version with ground beef or a vegetarian twist, Chili Con Carne is sure to impress.

Ingredients

  • 1 lb ground beef (or turkey for a leaner option)

  • 1 large onion, finely chopped

  • 3 cloves garlic, minced

  • 1 bell pepper (red or green), chopped

  • 2 tbsp olive oil

  • 1 can (14.5 oz) diced tomatoes

  • 1 can (15 oz) kidney beans, drained and rinsed

  • 1 can (15 oz) black beans, drained and rinsed

  • 2 tbsp tomato paste

  • 1 cup beef broth (or vegetable broth for a vegetarian version)

  • 2 tbsp chili powder (adjust to taste)

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • 1/2 tsp cayenne pepper (optional, for extra heat)

  • 1 tsp oregano

  • Salt and pepper to taste

  • 1 tbsp brown sugar (optional, balances the acidity of tomatoes)

  • Shredded cheese, sour cream, and chopped cilantro for garnish (optional)

Instructions

Step 1: Cook the Ground Beef

Start by heating 1 tablespoon of olive oil over medium heat in a large pot or Dutch oven. Add 1 lb of ground beef to the pot, breaking it up with a wooden spoon. Cook until the beef is browned and fully cooked through. Remove any excess fat and set the beef aside.

Step 2: Sauté the Vegetables

In the same pot, add 1 tablespoon of olive oil and heat it over medium heat. Add the chopped onion, bell pepper, and minced garlic. Sauté for about 4-5 minutes, or until the vegetables soften and become fragrant.

Step 3: Add the Spices

Now it’s time to add the spices that will infuse the chili with bold flavors. Stir in 2 tablespoons of chili powder, 1 tsp cumin, 1 tsp smoked paprika, and 1 tsp oregano. If you want extra heat, add 1/2 tsp cayenne pepper. Cook the mixture for 1 minute, allowing the spices to toast and release their full aromas.

Step 4: Add the Tomatoes and Beans

Pour in the 1 can of diced tomatoes, including the juices. Add 2 tablespoons of tomato paste, the drained and rinsed 1 can of kidney beans, and 1 can of black beans. Stir everything to combine, ensuring the beans and tomatoes are evenly distributed.

Step 5: Simmer the Chili

Next, add 1 cup of beef broth (or vegetable broth for a vegetarian version) and 1 tablespoon of brown sugar (if using). Bring the chili to a simmer, and once it’s bubbling, reduce the heat to low. Let it simmer, uncovered, for 30-45 minutes, stirring occasionally. The flavors will meld together, and the chili will thicken.

Step 6: Adjust the Seasonings

Taste the chili and adjust the seasonings. If necessary, add more salt, pepper, or chili powder for extra flavor. If you want more heat, feel free to add additional cayenne pepper or chili powder.

Step 7: Serve and Enjoy

Once the chili is done, serve it in bowls. For added flavor and texture, top each bowl with shredded cheese, a dollop of sour cream, and freshly chopped cilantro.

Notes

Chili always tastes better the next day! Let it sit overnight for deeper, richer flavors. Serve with rice, bread, or nachos for the perfect comfort meal.
