Instructions
Start by heating 1 tablespoon of olive oil over medium heat in a large pot or Dutch oven. Add 1 lb of ground beef to the pot, breaking it up with a wooden spoon. Cook until the beef is browned and fully cooked through. Remove any excess fat and set the beef aside.
In the same pot, add 1 tablespoon of olive oil and heat it over medium heat. Add the chopped onion, bell pepper, and minced garlic. Sauté for about 4-5 minutes, or until the vegetables soften and become fragrant.
Now it’s time to add the spices that will infuse the chili with bold flavors. Stir in 2 tablespoons of chili powder, 1 tsp cumin, 1 tsp smoked paprika, and 1 tsp oregano. If you want extra heat, add 1/2 tsp cayenne pepper. Cook the mixture for 1 minute, allowing the spices to toast and release their full aromas.
Pour in the 1 can of diced tomatoes, including the juices. Add 2 tablespoons of tomato paste, the drained and rinsed 1 can of kidney beans, and 1 can of black beans. Stir everything to combine, ensuring the beans and tomatoes are evenly distributed.
Next, add 1 cup of beef broth (or vegetable broth for a vegetarian version) and 1 tablespoon of brown sugar (if using). Bring the chili to a simmer, and once it’s bubbling, reduce the heat to low. Let it simmer, uncovered, for 30-45 minutes, stirring occasionally. The flavors will meld together, and the chili will thicken.
Taste the chili and adjust the seasonings. If necessary, add more salt, pepper, or chili powder for extra flavor. If you want more heat, feel free to add additional cayenne pepper or chili powder.
Once the chili is done, serve it in bowls. For added flavor and texture, top each bowl with shredded cheese, a dollop of sour cream, and freshly chopped cilantro.
