For the bread:

  • 1 ¾ cups (220g) all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • ½ cup (100g) granulated sugar

  • ½ cup (100g) light brown sugar

  • ½ cup (120ml) coconut milk (full-fat preferred)

  • ½ cup (115g) unsalted butter, melted (or coconut oil for extra flavor)

  • 2 large eggs

  • 2 Tbsp lime juice (freshly squeezed)

  • Zest of 2 limes

  • 1 tsp vanilla extract

  • 1 cup (90g) toasted shredded coconut


For the lime glaze (optional but delicious):

  • ½ cup (60g) powdered sugar

  • 1–2 Tbsp lime juice

  • ½ tsp lime zest

  • 1 Tbsp toasted coconut (for topping)


Instructions

1. Toast the coconut:

  1. Preheat oven to 350°F (175°C).

  2. Spread shredded coconut on a baking sheet and toast for 5–8 minutes, stirring once or twice, until lightly golden.

  3. Let cool.


2. Mix the dry ingredients:

  • In a large bowl, whisk together flour, baking powder, baking soda, salt, and both sugars.


3. Combine the wet ingredients:

  • In another bowl, whisk together melted butter (or coconut oil), coconut milk, eggs, lime juice, lime zest, and vanilla.


4. Combine everything:

  1. Pour wet ingredients into dry ingredients and stir just until combined (don’t overmix).

  2. Fold in toasted coconut, reserving a small handful for topping.


5. Bake:

  1. Pour batter into a greased 8×4-inch loaf pan (or two mini loaf pans).

  2. Sprinkle reserved coconut on top.

  3. Bake for 45–55 minutes (30–35 for mini loaves), until a toothpick inserted in the center comes out clean.

  4. Cool in the pan for 10 minutes, then transfer to a wire rack.


6. Glaze:

  1. In a small bowl, whisk powdered sugar with lime juice and zest until smooth and pourable.

  2. Drizzle over cooled bread and top with extra toasted coconut.
