Description

A Galette is the French term for a flat, free-form, single-crust pastry. Unlike a traditional pie, which requires careful shaping and trimming within a dish, the galette is rustic by design. The pastry dough is simply rolled into a rough circle, the filling is piled into the center, and the edges are folded casually over the fruit, leaving the center exposed.   • 2 tbsp cornstarch

  • 1 tsp vanilla extract


Finishing Touches

  • 1 egg, beaten (for egg wash)

  • 1 tbsp coarse sugar (turbinado or sanding sugar)


Instructions

1. Make the Crust

  1. In a bowl, whisk flour, sugar, and salt.

  2. Cut in cold butter until pea-sized pieces remain.

  3. Add ice water 1 tbsp at a time, mixing just until dough comes together.

  4. Shape into a disk, wrap, and chill 30–45 minutes.


2. Prepare the Filling

  • In a large bowl, gently toss berries with sugar, lemon juice, zest, cornstarch, and vanilla. Set aside.


3. Assemble the Galette

  1. Preheat oven to 400°F (205°C).

  2. Roll chilled dough into a 12-inch circle on parchment.

  3. Spoon berry filling into the center, leaving a 2-inch border.

  4. Fold edges over filling, pleating as needed.

  5. Brush crust with egg wash and sprinkle with coarse sugar.


4. Bake

  • Transfer parchment to a baking sheet.

  • Bake 35–40 minutes, until crust is golden and filling is bubbly.


5. Cool & Serve

  • Cool at least 15 minutes before slicing.

  • Serve warm or room temperature, plain or with vanilla ice cream.
