Description

A Tuna Niçoise Burger is a creative reinterpretation of the traditional French Niçoise salad. It transforms the salad’s key components into a flavorful burger:

  • Fresh tuna and new potatoes mashed together for texture

  • Char-red veggies dressed with olive oil and red wine vinegar

  • Olives, egg, and tomato to complete the Niçoise flavor profile

The result is a handheld masterpiece, rich in protein, vitamins, and Mediterranean flair. This recipe cleverly combines convenience with sophistication, making it perfect for lunch, dinner, or even a stylish picnic.


Ingredients

  • 1 red onion, peeled and quartered
  • 160g frozen green beans
  • 1 tsp red wine vinegar
  • 1 tbsp extra virgin olive oil
  • 1 medium free-range egg
  • 300g tin of peeled new potatoes, drained
  • 145g tin of tuna in spring water, drained
  • 3 large white baps (burger buns)
  • 2 ripe tomatoes, thinly sliced
  • 4 black Kalamata olives, pitted and crushed
  • Olive oil, for frying
  • Black pepper, to taste

Instructions

  1. Char the Veggies Heat a non-stick pan over medium heat. Add red onion and green beans. Cook for 4 minutes, turning occasionally, until softened and slightly charred.
  2. Make the Dressing In a bowl, whisk vinegar, olive oil, and black pepper. Toss in the hot veggies and set aside.
  3. Soft-Boil the Egg Simmer the egg for 5 minutes. Cool under cold water, peel, and halve.
  4. Prepare the Burger Mix Mash the potatoes in a bowl. Add tuna and mix. Blitz 1 bap into breadcrumbs and add to the bowl. Finely chop ¼ of the dressed veggies and mix in. Season with pepper and combine well.
  5. Shape & Cook Patties Divide mixture into 4 patties. Fry in olive oil for 4 minutes per side until golden. Toast the remaining baps in the pan.
  6. Assemble the Burgers Drizzle dressing on bun bases. Layer with tomato slices and place 2 patties on each. Serve with the remaining veggie salad and halved egg on top.

Notes

Serve these burgers with a side of crispy sweet potato fries or a light green salad with lemon vinaigrette for a complete meal. For an extra Mediterranean touch, try adding a dollop of tapenade or a sprinkle of crumbled feta on top!
