Turkey Meatloaf with Hidden Vegetables

Turkey Meatloaf with Hidden Vegetables: A Creative and Nutritious Twist on a Classic Recipe

  • Author: David Andersson

  • Diet: Low Fat

Description

Turkey Meatloaf with Hidden Vegetables is a healthier, more flavorful take on the traditional meatloaf. Unlike conventional meatloaf recipes that primarily feature ground beef or pork, this version uses lean ground turkey. This not only reduces the fat content of the meal but also allows for a lighter, more nutrient-dense dish.

Ingredients

  • 1 lb ground turkey – This is the base of your meatloaf and a lean protein choice.

  • 1 medium zucchini, grated – Adds moisture and a subtle vegetable flavor.

  • 1 large carrot, grated – Provides natural sweetness and essential vitamins.

  • 1 small onion, finely chopped – Adds depth and savory flavor to the meat mixture.

  • 1/2 cup spinach, finely chopped – A nutrient-packed green that blends seamlessly into the loaf.

  • 1/4 cup red bell pepper, finely chopped – For a pop of color and a slight sweetness.

  • 1/2 cup oats (or breadcrumbs) – Helps bind the ingredients together, making the meatloaf easier to slice.

  • 1/4 cup grated Parmesan cheese – Adds a rich, savory flavor.

  • 1 large egg – Helps to bind the ingredients and gives the meatloaf structure.

  • 1/4 cup milk – Moistens the mixture for a tender texture.

  • 2 tbsp olive oil – Used to sauté the vegetables and add flavor.

  • 1 tbsp garlic powder – A seasoning that complements the vegetables and turkey.

  • 1 tsp dried thyme – A fragrant herb that pairs well with turkey and veggies.

  • Salt and pepper to taste – For seasoning.

  • 1/4 cup tomato sauce (for topping) – Adds a nice tangy flavor to the top of the meatloaf.

Instructions

1. Preheat the Oven

Preheat your oven to 375°F (190°C) and lightly grease a loaf pan with cooking spray or olive oil to ensure the meatloaf doesn’t stick.

2. Prepare the Vegetables

Grate the zucchini and carrot, and finely chop the onion, spinach, and red bell pepper. If you prefer, you can use a food processor to make the chopping and grating process quicker. Set aside the prepared vegetables.

3. Sauté the Vegetables

In a skillet, heat 1 tbsp of olive oil over medium heat. Add the chopped onion, bell pepper, and spinach. Sauté for about 3-5 minutes until softened. Once done, remove the vegetables from the heat and let them cool slightly.

4. Mix the Meatloaf

In a large mixing bowl, combine the ground turkey, grated zucchini, grated carrot, sautéed vegetables, oats (or breadcrumbs), Parmesan cheese, egg, milk, garlic powder, dried thyme, salt, and pepper. Mix everything together gently until just combined. Be careful not to overmix, as this can make the meatloaf dense.

5. Shape the Meatloaf

Transfer the meat mixture into the prepared loaf pan and press it down into an even shape, smoothing the top.

6. Top with Tomato Sauce

Spread a thin layer of tomato sauce on top of the meatloaf. This gives it a nice glaze and adds a tangy flavor.

7. Bake the Meatloaf

Place the meatloaf in the oven and bake for about 45-50 minutes, or until the internal temperature reaches 165°F (74°C) and the top is browned.

8. Let the Meatloaf Rest

Once baked, let the meatloaf rest for about 10 minutes before slicing. This allows the juices to redistribute, making the meatloaf easier to slice and more flavorful.

Serve this meatloaf with mashed potatoes, roasted vegetables, or a simple green salad for a well-rounded, nutritious meal.

Notes

This turkey meatloaf is a family favorite not just because it’s healthy, but because it’s packed with flavor and secretly loaded with veggies! Feel free to customize the hidden vegetables based on what you have—zucchini, carrots, spinach, or even finely chopped mushrooms all work great. Leftovers make amazing sandwiches the next day. Enjoy!
