Ingredients
1 lb (450 g) ground turkey
1 medium onion, diced
2 cloves garlic, minced
2 medium sweet potatoes, peeled and diced (about 3 cups)
1 red bell pepper, diced
1 can (15 oz) black beans, drained and rinsed
1 can (14.5 oz) diced tomatoes (optional for saucier version)
1 tsp chili powder
1 tsp cumin
½ tsp smoked paprika
½ tsp salt (to taste)
¼ tsp black pepper
1 tbsp olive oil
½ cup chicken or vegetable broth (or water)
Optional toppings: avocado, shredded cheese, cilantro, lime wedges
Instructions
Cook the turkey:
Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until browned, breaking it up with a spatula (about 5–7 minutes). Remove and set aside.Sauté vegetables:
In the same skillet, add onion and garlic. Cook 2 minutes until fragrant. Add sweet potatoes and bell pepper; cook for 5 minutes, stirring occasionally.Season and simmer:
Add chili powder, cumin, paprika, salt, and pepper. Stir well. Pour in broth, cover the skillet, and simmer until sweet potatoes are tender (10–12 minutes).Combine everything:
Return cooked turkey to the skillet. Stir in black beans (and diced tomatoes if using). Cook uncovered for 3–5 minutes until heated through and liquid slightly reduces.Serve:
Top with diced avocado, cilantro, shredded cheese, or a squeeze of lime.
