Instructions

  • Cook the turkey:
    Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until browned, breaking it up with a spatula (about 5–7 minutes). Remove and set aside.

  • Sauté vegetables:
    In the same skillet, add onion and garlic. Cook 2 minutes until fragrant. Add sweet potatoes and bell pepper; cook for 5 minutes, stirring occasionally.

  • Season and simmer:
    Add chili powder, cumin, paprika, salt, and pepper. Stir well. Pour in broth, cover the skillet, and simmer until sweet potatoes are tender (10–12 minutes).

  • Combine everything:
    Return cooked turkey to the skillet. Stir in black beans (and diced tomatoes if using). Cook uncovered for 3–5 minutes until heated through and liquid slightly reduces.

  • Serve:
    Top with diced avocado, cilantro, shredded cheese, or a squeeze of lime.
