  • Guacamole (avocado, lime, cilantro, salt & pepper)
  • Cotija cheese (optional)
  • Tortilla chips for serving

Instructions

  1. Sauté veggies: Heat olive oil in a large skillet over medium heat. Add onion, bell pepper, and garlic. Cook until softened (about 5 minutes).
  2. Cook turkey: Add ground turkey and break it apart. Season with cumin, paprika, chili powder, garlic powder, salt, and pepper. Cook until browned.
  3. Thicken mixture: Sprinkle flour over the turkey and stir. Add chicken stock and simmer until thickened.
  4. Add cheese: Sprinkle cheddar cheese over the skillet. Cover and let it melt.
  5. Top it off: Add lettuce, pickled onions, pico, guac, and cotija cheese.
  6. Serve: Scoop with tortilla chips or spoon into taco shells, sweet potatoes, or salads.
