Two-Person Raspberry Crumbles are individual-sized baked desserts, loaded with jammy, sweet raspberries (or mixed berries), tucked under a crisp, golden crumble topping made of oats, brown sugar, flour, and melted butter. For the berry filling:
- 1½ cups fresh or frozen raspberries (or mixed berries)
- 2 tbsp sugar (adjust to taste)
- ½ tbsp cornstarch
- Squeeze of lemon juice
For the crumble topping:
- 4 tbsp unsalted butter, melted
- ½ cup rolled oats
- ½ cup all-purpose flour
- ¼ cup brown sugar
- ¼ tsp baking powder
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- Mix the berries with sugar, cornstarch, and lemon juice in a small bowl.
- In another bowl, combine all crumble ingredients until the mixture resembles coarse crumbs.
- Press two-thirds of the crumble into the bottom of two 4-inch ramekins. Bake for 5 minutes to set the crust.
- Spoon the berry mixture over the crusts. Top with the remaining crumble.
- Bake for 7–10 minutes, until the berries are bubbling and the tops are golden.
- Cool slightly (if you can wait!) and serve warm—ideally with a scoop of vanilla ice cream or a dollop of whipped cream.
