Description

Two-Person Raspberry Crumbles are individual-sized baked desserts, loaded with jammy, sweet raspberries (or mixed berries), tucked under a crisp, golden crumble topping made of oats, brown sugar, flour, and melted butter. Served warm, they strike a perfect balance between tart and sweet, soft and crunchy.

For the berry filling:

  • 1½ cups fresh or frozen raspberries (or mixed berries)
  • 2 tbsp sugar (adjust to taste)
  • ½ tbsp cornstarch
  • Squeeze of lemon juice

For the crumble topping:

  • 4 tbsp unsalted butter, melted
  • ½ cup rolled oats
  • ½ cup all-purpose flour
  • ¼ cup brown sugar
  • ¼ tsp baking powder
  • Pinch of salt

Instructions

  • Preheat your oven to 350°F (175°C).
  • Mix the berries with sugar, cornstarch, and lemon juice in a small bowl.
  • In another bowl, combine all crumble ingredients until the mixture resembles coarse crumbs.
  • Press two-thirds of the crumble into the bottom of two 4-inch ramekins. Bake for 5 minutes to set the crust.
  • Spoon the berry mixture over the crusts. Top with the remaining crumble.
  • Bake for 7–10 minutes, until the berries are bubbling and the tops are golden.
  • Cool slightly (if you can wait!) and serve warm—ideally with a scoop of vanilla ice cream or a dollop of whipped cream.
