Ingredients
For the base:
- 225g digestive biscuits, crushed
- 100g unsalted butter, melted
For the caramel:
- 75g butter
- 75g dark brown soft sugar
- 397g Carnation condensed milk
For the topping:
- 2 bananas, sliced
- 150ml whipping cream
- Cocoa powder or grated chocolate, for garnish
Instructions
- Prepare the base:
- Mix the crushed biscuits with melted butter until well combined.
- Press the mixture into the base and sides of a 20cm loose-bottomed cake tin.
- Chill for 10 minutes to set.
- Make the caramel:
- In a heavy-based saucepan, melt the butter and sugar over low heat, stirring until dissolved.
- Add the condensed milk and bring to a rapid boil for about 1 minute, stirring continuously until thick and golden.
- Spread the caramel over the biscuit base and let it cool. Chill for 1 hour.
- Assemble the pie:
- Carefully remove the pie from the tin and place it on a serving plate.
- Arrange the sliced bananas over the caramel layer.
- Whip the cream until soft peaks form, then spread it over the bananas.
- Garnish with cocoa powder or grated chocolate.
- Chill & serve:
- Refrigerate until ready to serve. Slice and enjoy!

For an extra touch of indulgence, try drizzling melted dark chocolate or caramel sauce over the whipped cream before serving. You can also add a sprinkle of crushed nuts like toasted almonds or hazelnuts for added texture. If you prefer a richer flavor, consider a layer of chocolate ganache beneath the banana slices.
