Instructions
- Sear the beef: Heat oil in a large pan over medium-high. Sear beef strips in batches, 1 minute per side. Remove and keep warm.
- Sauté veggies: In the same pan, melt butter. Add onions and mushrooms, sauté until soft and browned (6–8 minutes).
- Build the sauce: Add garlic and cook 1 minute. Stir in flour and cook another minute. Pour in broth, scraping the pan. Add cream and simmer 2 minutes.
- Temper sour cream: Mix a few spoonfuls of hot sauce into sour cream, then stir it into the pan.
- Finish: Add Worcestershire, mustard, salt, and pepper. Return beef and juices to the pan. Simmer until heated through.
- Serve: Spoon over egg noodles and garnish with parsley.
