Ingredients
For the Filling:
- 1 pound ground beef (80/20 blend recommended)
- 1 medium yellow onion, finely diced
- 2 cups freshly grated sharp cheddar cheese
- 1/3 cup diced dill pickles
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
For Assembly:
- 12–15 egg roll wrappers
- 1 egg, beaten (for sealing)
- Vegetable oil for frying (about 4 cups)
Instructions
Step 1: Prepare the Filling
- Heat a large skillet over medium-high heat
- Add ground beef and cook, breaking it up with a spoon
- Season with salt, pepper, garlic powder, and paprika
- Cook until beef is browned and cooked through (about 6-8 minutes)
- Add diced onions and cook for 3-4 minutes until softened
- Stir in Dijon mustard and diced pickles
- Remove from heat and let cool for 10 minutes
- Mix in grated cheddar cheese until well combined
Step 2: Assemble the Egg Rolls
- Lay an egg roll wrapper on a clean surface, diamond-shaped
- Place 2-3 tablespoons of filling in the center of the wrapper
- Fold the bottom corner over the filling
- Fold in the left and right corners
- Roll tightly toward the top corner
- Brush the top corner with beaten egg to seal
- Repeat with remaining wrappers and filling
Step 3: Frying Process
- Heat vegetable oil to 350°F (175°C) in a deep fryer or large pot
- Carefully add 3-4 egg rolls at a time (don’t overcrowd)
- Fry for 2-3 minutes until golden brown and crispy
- Remove with a slotted spoon and drain on paper towels
- Repeat with remaining egg rolls
Big Mac Sauce (Optional Dipping Sauce):
- 1/2 cup mayonnaise
- 2 tablespoons sweet pickle relish
- 1 tablespoon yellow mustard
- 1 teaspoon white vinegar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
Mix all ingredients together and refrigerate for at least 30 minutes before serving.
