For the marinade:

  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon Shaoxing wine or dry sherry (optional)
  • 1 teaspoon sesame oil (optional)

For the stir-fry sauce:

  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon brown sugar or honey
  • 1/2 cup beef broth or water
  • 1 teaspoon cornstarch (mixed with 1 tablespoon water to make slurry)

Instructions

  1. Marinate the Beef:
    In a bowl, combine sliced beef with soy sauce, cornstarch, Shaoxing wine, and sesame oil. Mix well and let it marinate for at least 15 minutes.
  2. Prepare Broccoli:
    Steam or blanch the broccoli florets in boiling water for 2-3 minutes until bright green and slightly tender. Drain and set aside.
  3. Cook Beef:
    Heat 2 tablespoons of vegetable oil in a large skillet or wok over high heat. Add the marinated beef and stir-fry until browned and just cooked through, about 2-3 minutes. Remove beef from the pan and set aside.
  4. Cook Aromatics and Broccoli:
    In the same pan, add remaining 1 tablespoon oil. Add garlic and ginger, stir-fry for about 30 seconds until fragrant. Add broccoli and stir-fry for 1-2 minutes.
  5. Combine and Sauce:
    Return the beef to the pan. Stir together soy sauce, oyster sauce, brown sugar, and beef broth. Pour the sauce mixture over the beef and broccoli. Stir well.
  6. Thicken Sauce:
    Add the cornstarch slurry, stirring constantly until the sauce thickens, about 1 minute.
