At its core, Vegan Choco-Chunk Tahini Swirl Banana Bread is a plant-based twist on the beloved quick bread. Dry Ingredients
2 cups all-purpose flour
1 tsp baking soda
½ tsp baking powder
½ tsp salt
1 tsp cinnamon (optional)
Wet Ingredients
3 very ripe bananas, mashed
½ cup brown sugar (or coconut sugar)
¼ cup maple syrup
⅓ cup neutral oil (vegetable, avocado, or melted coconut oil)
¼ cup unsweetened plant-based milk
1 tsp vanilla extract
Add-ins
¾ cup vegan dark chocolate chunks
⅓ cup tahini (well stirred)
1–2 tbsp maple syrup (to sweeten tahini swirl)
Instructions
Preheat oven to 350°F (175°C). Line or grease a 9×5-inch loaf pan.
In a bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
In a separate large bowl, mash bananas until smooth. Whisk in sugar, maple syrup, oil, plant milk, and vanilla.
Add dry ingredients into wet ingredients and gently mix until just combined.
Fold in chocolate chunks (reserve a few for topping).
In a small bowl, mix tahini with 1–2 tbsp maple syrup until smooth.
Pour half the batter into loaf pan. Drizzle half the tahini mixture on top and swirl with a knife.
Add remaining batter, then remaining tahini. Swirl again gently.
Sprinkle extra chocolate chunks on top.
Bake for 50–60 minutes, or until a toothpick inserted comes out mostly clean.
Cool in pan for 10–15 minutes, then transfer to a wire rack to cool completely.
