  • ¼ cup milk or cream
  • ½ cup grated Parmesan or cheddar cheese (plus extra for topping)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 cups fresh spinach, roughly chopped
  • 1 small zucchini, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried herbs (thyme, oregano, or Italian seasoning)
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat: Position a rack in the middle of the oven and preheat to 375°F (190°C).
  2. Prepare the Egg Mixture: In a large bowl, whisk together the eggs, milk, half of the cheese, salt, and pepper until well combined. Set aside.
  3. Cook the Vegetables: Heat olive oil in a 10-inch oven-safe skillet (cast iron works great) over medium heat. Add the onion and cook until softened, about 3-4 minutes. Add the bell pepper and zucchini and cook for another 3-4 minutes until vegetables begin to soften. Add the garlic and dried herbs and cook for 30 seconds until fragrant.
  4. Add Spinach: Add the spinach to the skillet and stir until wilted, about 1-2 minutes.
  5. Combine with Eggs: Spread the vegetables evenly in the skillet. Pour the egg mixture over the vegetables. Tilt the pan to make sure the eggs are evenly distributed. Cook without stirring for 2-3 minutes until the edges begin to set.
  6. Bake: Sprinkle the remaining cheese on top and transfer the skillet to the preheated oven. Bake for 15-18 minutes, or until the eggs are set and the top is lightly golden.
  7. Serve: Let the frittata cool for 5 minutes before slicing. Garnish with fresh herbs if desired. Serve warm or at room temperature.
