Instructions

1. Prep the Pan

  1. Preheat oven to 350°F (175°C).

  2. Grease and line an 8-inch (20 cm) round or 9-inch springform pan with parchment paper.


2. Prepare the Batter

  1. In a medium bowl, whisk together flour, baking powder, baking soda, cardamom, cinnamon, and salt.

  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy (2–3 minutes).

  3. Add eggs one at a time, beating well after each addition.

  4. Stir in vanilla extract and sour cream (or yogurt) until smooth.

  5. Gently fold in the dry ingredients until just combined.

  6. Toss diced pears with lemon juice, then fold them into the batter.


3. Bake

  1. Spread the batter evenly in the prepared pan.

  2. Arrange thin pear slices decoratively on top if desired, and sprinkle with turbinado sugar.
