Ingredients

  • 4 cups seedless watermelon, cubed or balled

  • 1 tablespoon fresh lime juice (optional for a tangy twist)

  • Freshly ground black pepper, to taste

  • Pinch of sea salt (optional—feta adds saltiness already)


Instructions

  • Prepare the Watermelon: Cut the seedless watermelon into bite-sized cubes or use a melon baller for a more decorative presentation. Place the pieces in a large mixing bowl.

  • Add Feta and Mint: Gently add the crumbled feta cheese and the torn or chopped fresh mint leaves to the bowl with the watermelon.

  • Dress the Salad: Drizzle the extra-virgin olive oil and, if using, the fresh lime juice over the mixture.

  • Season: Sprinkle freshly ground black pepper over the salad. Add a pinch of sea salt if desired, keeping in mind that feta cheese is already salty.

  • Toss and Serve: Gently toss all the ingredients together to combine. Chill the salad for 10–15 minutes to allow the flavors to meld, or serve immediately for the freshest taste.
